Be Part of a Global Movement (Earth Hour on 23rd March, 8.30pm)

What is Earth Hour?

It is a global movement originated in Sydney in 2006 to show support for climate change action. Businesses and major buildings switched off their lights for an hour to display the message that everyone – from politicians to children – has a part to play in protecting the Earth from climate change.

 

Do you know that…

Singapore is one of the top 21 countries in social activities around Earth Hour in 2011? Every year since 2009, our iconic monuments, buildings and hundreds of businesses participate in Earth Hour to show support for protecting Planet Earth from climate change. If you are around the city area, be sure to catch sight of lights being switched off on Singapore’s magnificent skyline at 8.30pm sharp on 23rd March 2013.

Ceri’s GABA Sprouted Brown Rice Salad Recipe

(Recipe created by Ms. Ceridwen Wolf of Zenxin Organic Food)

 

Ingredients:

Grain

400g Zenxin organic GABA sprouted brown rice

800g filtered water

 Soak, then cook in a Japanese rice cooker on the brown rice programme.

 

Dressing

100ml freshly pressed organic orange juice

50ml ‘Guerzoni’ organic balsamico bianco

1 tbsp wild raw honey

1 pinch Zenxin Himalayan rock salt

100 ml ‘Pressed Purity’ cold-pressed macadamia oil

Blend first four ingredients together then add the oil in a steady trickle until you achieve an emulsion.

Pour 2/3 of the dressing onto the warm rice so that it absorbs well.

 

Mushrooms

180g Zenxin organic button mushrooms (sliced)

 Take the remaining 1/3 of the dressing and massage it into the mushrooms. Add the following ‘Luscious Pieces’ ingredients to the mixture, stirring tenderly.

 

Luscious pieces

100g soaked pumpkin seeds (soaked overnight in the fridge)

1 local Zenxin organic local cucumber (chopped)

1 ripe Zenxin organic avocado (chopped)

6 organic dates (chopped)

Seeds and grains both benefit from soaking, as this activates the seed increasing the nutritional value and making it more digestible.

Zenxin welcomes Jusco’s staff to our Organic Park

Zenxin welcomed 40 staff from giant supermarket Jusco to our Organic Park last Thursday.

They explored our Organic Park, learnt about our sustainable organic farming methods and listened as our director (Mr Tai Seng Yee) explained the challenges as well as the fulfilment Zenxin obtains as we embark on our organic and sustainability journey on a daily basis.

Ceri’s Roasted Beetroot & Sprouted Buckwheat Salad recipe

(This delicious, highly nutritious and visually pleasing salad recipe was created by Ms. Ceridwen Wolf of Zenxin Organic Food)

 

Ingredients:

 

Grain

250g Zenxin’s Simply Natural organic hulled buckwheat

Enough filtered water to cover well

Soak over night, then rinse 3 times daily for 2 days until the buckwheat tails are visible

 

Beet

450g Zenxin organic beetroot

 Take the beetroot and wash the skin carefully, then place on a tray in the oven to roast. Depending on the size/sizes of your beetroot(s) this will take 1-2hrs

Carefully peel away the skin and discard. The roasting enhances its flavour and the skin keeps all the goodness in during the process. Chop the beetroot into small cubes.

 

Luscious pieces

3 organic Valencia oranges (peeled, sliced and cut into segments)

100g Zenxin fresh organic peasprouts

 Toss all the ingredients together and add the dressing below.

 

Dressing

100ml freshly pressed organic orange juice

50ml Guerzoni organic balsamico bianco

1 tbsp wild raw honey

1 pinch Himalayan rock salt

100 ml Pressed Purity cold-pressed macadamia oil

Blend the first four ingredients together then add the oil in a steady trickle until you achieve an emulsion. This will give you plenty of dressing for the salad and some to store in the fridge for a green salad the next day.

Buckwheat – delicious & rich in nutrients

 

What is buckwheat?

This beautiful plant with its heart-shaped leaves and nectar-rich pink or white flowers, produces triangular seeds like beach masts, hence its German name ‘Buchweizen’.

Buckwheat has become part of many ethnic cuisines from the delicious soba noodles of Japan, to the Kasha porridge of the Russian steppes, to the delicate buckwheat crepes made in Brittany from Blé noir (Black flour).

Now much of the world’s supply is grown in Russia and China, with some acreage in Canada and the Northern USA. It grows well in moist cool climates and at high altitudes on well-drained soil, but is sensitive to frost.

 

Buckwheat is rich in nutrients!  

Perhaps the most exciting form is buckwheat sprouts, a living food rich in bioavailable minerals such as zinc to support the immune system, copper, manganese and potassium to maintain water/acid balance, and support bone growth and the nervous system.

Buckwheat sprouts also contain all eight essential amino acids and the flavonoids quercetin (antiviral, anti-inflammatory) and rutin (anti-inflammatory, inhibiting platelet aggregation). Rutin is a powerful capillary wall strengthener and helps heal varicose veins and haemorrhoids and prevent hardening of the arteries.

Buckwheat is also useful in a Diabetes type II diet as it contains D-chiro-inositol which helps balance blood sugar levels. It is also known to lower high blood pressure. Sprouted buckwheat also helps with constipation as it cleanses the colon and alkalizes the body.

So, being high in fibre and gluten-free, this nutty grain is a fantastic addition to your diet. Even the hulls are useful for cool buckwheat pillows or meditation cushions!

 

Do you know…..?

1)    Buckwheat is not related to wheat (Poaceae family), but belongs to the Polygonaceae family like dock, sorrel and rhubarb. This means it is also gluten-free.

2)    One way to remember that buckwheat is not a true grain is illustrated in Hans Christian Andersen’s story. Buckwheat stands straight and looks to heaven, not bowing its head like rye, barley, wheat or oats.

3)    Buckwheat is one crop which is very attractive to bees and also great as a green manure, returning nutrients to the soil. The attractive dark brown honey has a distinctive taste and is good for coughs.

4)    The wild ancestors of buckwheat are still found in Yunnan and it is possible that it was first domesticated here around 6000BC and then spread via trade routes to Central Asia, Europe and eventually with settlers to North America.
