CNY Recipe: Jade Cabbage Roll 碧綠翡翠卷

A mix of different colour ingredients wrapped in crispy cabbage leaves, dipped in the flavourful sweet and sour sauce to complete the tantalizing taste with interesting textures.

Ingredients:

1 mid-size (about 1kg) Organic English Cabbage (Can be replaced with Chinese Cabbage)

15 pcs Simply Natural Shitake Mushrooms (Soaked in water at least an hour before)

1 Organic Carrot (at least 15cm long)

4 Antibiotic-free Eggs or 100g bean curd skin (for those who don’t eat eggs)

Seasoning: (amount depending on own preference)

Simply Natural Atlantic Sea salt

Simply Natural Seasoning G powder

Dipping sauce: (Mix all the ingredients below for a tantalizing sweet and sour sauce!)

4 tbsp Simply Natural Organic Black Bean Sauce (Thick)

2 tsp Simply Natural Organic Wheat Vinegar

2 tsp Simply Natural Organic Cane Sugar


Directions:

  1. Season and whisk the eggs. Make egg roll sheet in heated skillet. Slice the eggs. For those who do not eat eggs, you can replace it with cooked bean curd skin.
  2. Slice and cut half of the carrot into long and thin ribbons of about 5mm width (prepare more just in case). Julienne cut the other half into matchstick size.
  3. Slice the mushrooms. Saute and season mushroom with julienne cut carrot until fragrant and soft. Separate cabbage leaves from head, piece by piece. Boil them slightly in boiling water until the colour changes, to retain the crispy texture. If you prefer soft texture, use Chinese cabbage instead and make sure the leaves are fully-cooked and soft. Dry up.
  4. Cook carrot long slices in boiling water. Dry them up for the next step.
  5. Spilt one cabbage leaf (or Chinese cabbage leaf) into half from its stem. Lay it flat, add on egg slices, mushroom slices and carrot slices and wrap all the ingredients into envelope-like roll (with both ends close).
  6. Tie up the long carrot slice on the cabbage roll as ribbon. Serve with dipping sauce.

材料:

有机包菜1颗,约1kg(可用黄芽白菜代替)

Simply Natural香菇15朵(泡水浸软后备用)

有机红萝卜1条(选择超过15cm的便于造型)

无抗生素鸡蛋4粒或腐皮100g

调味料:(适量,依個人喜好)

Simply Natural大西洋海盐,Simply Natural素G粉

沾酱:(混合以下醬料即可做出開胃酸甜醬)

Simply Natural有机黑大豆油膏4汤匙(tbsp)

Simply Natural有机谷醋2茶匙(tsp)

Simply Natural有机蔗糖2茶匙(tsp)


做法:

  1. 调味好的鸡蛋用小火煎成蛋皮,切丝备用。不吃蛋者可以用腐皮代替。
  2. 削出几条长长的胡萝卜薄片,切成宽度5mm左右的条状(可多准备几条)。剩下的萝卜可以切成丝。
  3. 香菇切细丝,与萝卜丝一起加入调味料炒香备用。煮开热水,将包菜放入热水稍微焯水,时间不要太久,颜色改变即可捞起,可以保持口感爽脆。(若喜欢软的口感软糯可以使用黄芽白,煮的时间稍长,变软才捞起来。)
  4. 将萝卜条放入热水煮熟,捞起沥干水。
  5. 将包菜叶从梗处撕成两半,摊平,放上混合好的内陷,以包薄饼的方式包成菜卷(头尾都要包住)
  6. 系上胡萝卜丝即可配合沾醬摆盘上桌。
